These fields aren’t just where our story starts—they’re where generations of jimadores have passed down their knowledge, selecting each agave at peak maturity for optimal flavor and sugar content.

We work with a family-owned distillery that takes pride in every step of the process. Our agave is slow-roasted in brick ovens, crushed with a roller mill, and naturally fermented in open-air tanks. It’s a slow craft, done in small batches—with no additives, ever. Just patience, care, and respect for the process.
